Eat Your Heart Out part 2: Potato Roses

These Potato Roses looked very simple, and easy. There was only a few steps, so I assumed it would be an easy project to add to our pork tenderloin dinner.  I was wrong. The slices were too thick, un-rollable, and very messy. Only two or three of the 12 actually turned out well. Allow plenty of time for complications, plus about 30 minutes to bake if you decide to tackle this challenge!

Ingredients:

Potatoes (About one per rose)

Butter (You’re going to need at least a stick. Probably more.)

Salt, Pepper, and any other seasoning

Tools:

2 Bowls

A knife, slicer or grater (I tried all of these things. None of them really worked out well. It wasn’t until after I’d put the roses in the oven that I was told that we have a food processor that slices things.)

  1. Wash and peel the potatoes, then slice into ‘wafer thin’ slices.
  • This was harder than it sounds. I tried many different tools and nothing really worked. I was constantly afraid I would cut my fingers.

  1. Soak the slices in butter.
  • You’re going to need so much butter. I used 3 sticks just to soak the potatoes used for my 12 roses.

  1. Layer the roses, and then roll them into roses. Then, place them in the tin, and season them.
  • This was the hardest part! It was nearly impossible to get the slices to stick together, so I ended up just shoved potato into rose shapes in the muffin tin. Also, I didn’t use nearly enough salt and pepper. I ended up adding more when they were done cooking.

  1. Bake until golden!
  • I baked them at 350 degrees for 40 minutes. This made the tops of the potatoes a little crispy, but otherwise they were soft all the way through.

When I reached the end of my patience, I put the remaining potatoes in a sqaure pan, with some of the butter. I seasoned them and then cooked them just like Au Gratin potatoes. They turned out yummy, though not rose shaped.

We paired the potatoes with a pork tenderloin, pre-seasoned. We cooked it at 450 degrees, for 45 minutes. It was a great meal, just not as easy as it looked.
